Cooking Demo: The Art and Science of Dressings and Sauces

Participants will learn to create dressings and sauces with various flavors.

  • Understand Flavor Architecture:
    • Explore how different oils, acids, sweeteners, and salts can change flavor. Healthy fats will be emphasized for their positive effects on lipid levels.
    • How emulsions work.
    • The role of herbs, spices, and aromatics and how they can transform flavors.
  • Nutrient Density of Dressings
    • Healthy fats and their impact on lipids
    • Prebiotic-rich ingredients (garlic, onions, herbs)
    • Using nuts and seeds for creaminess

This class will be taught by Katherine Ferruzzi, MScN.
