Participants will learn to create dressings and sauces with various flavors.

- Understand Flavor Architecture:
- Explore how different oils, acids, sweeteners, and salts can change flavor. Healthy fats will be emphasized for their positive effects on lipid levels.
- How emulsions work.
- The role of herbs, spices, and aromatics and how they can transform flavors.
- Nutrient Density of Dressings
- Healthy fats and their impact on lipids
- Prebiotic-rich ingredients (garlic, onions, herbs)
- Using nuts and seeds for creaminess
This class will be taught by Katherine Ferruzzi, MScN.
